Pickled cucumbers in salt brine

Buy small FRESH cucumbers, wash them well. x Boil-clean a large glass jar and cool it down. x At the bottom of the jar put a bunch of washed fresh dill (shamir) x Fit cucmbers inside the jar. In between the cucmbers add fresh, peeled garlic cloves (shinei shum) and fresh green chili peppers (or not, if you don't want spicy) x On top of everything put some more fresh dill. x Boil enough water to fill the jar. Mix in 1 tablespoon salt for each cup of water. Let the water cool down. x Pour the salted water into the jar with the cucmbers. Close the lid tight and place in direct sunlight (on your window sill) on top of a kitchen towel, and wait about 1 week. x The cucmbers will change color from dark green to olive green. The water will turn cloudy and some might spill out of the jar (hence the towel) and you will see a white deposite on the bottom of the jar. x After 1 week, take one cucmber out and taste it. If you think it's not done yet, close the jar and leave it longer. x Beteavon! x Talila
